The Bisol family have been at the heart of Treviso viticulture since records were kept, their name appears on the earliest cartography, within the illustrious DOCG Superiore di Cartizze itself. A strictly delineated provenance, Ruggeri Quartese is sourced off vines planted to auspicious hillsides between Conegliano and Valdobbiadene, such challenging terrains mean that everything must be done manually, plantings are all managed by hand, bunches are picked and sorted one at a time, achieving limited release Prosecco of the highest standard.

From an exclusive parcel of vine on the Dolomitic ridges of Treviso, in the prestigious precincts of upper Valdobbiadene hills, salubrious terroirs which are so similar to the calcerous limestone slopes of Côté champagne. The vineyards here are classified as Superiore, the husbandry and harvest are all done by hand, yields are minimal but these are the finest sparkling wines in the world. Prosecco Superiore are marked by their excellence and finesse, Giustino B is defined by its vivid fruit, extra dry on the palate, in true adults only styling.

The Ruggeri wineworks remain family owned and operated, a tradition which predates the nineteenth century, the estate cellars were established somewhat later in 1950, essentially for the production of superior quality Prosecco wines. Glera is the grape of choice, a tradition which dates back millennia, it makes astonishingly satisfying effervescents of seamlessness and style. Ruggeri make Prosecco and little else, particularly for palates of discerning taste, elegant, flowery and intense, the frizzante of choice alongside white meats and refined Al fresco fare.

From the highest elevation vineyards in King Valley, up to 860 metres, the chilly climes extend the ripening for full development of crisp, elegant flavours. Treated to an extended term of twenty three months bottle age on sedimentery yeast lees, a choice component is sent to seasoned oak barrels for a course of maturation and added complexity. A finely beaded style of delicate zest perfumes, almond pralines and strawberry over supple rose floral, the palate is finely structured with an underlying core of fresh citrus acidity that drives through to the finish.

As Australia's first PhD in viticulture, founder of Pipers Brook Vineyard and Pirie Estate, recipient of the Australia Medal for his services to Tasmanian tourism and wine, Andrew Pirie's contribution to the industry is almost without peer. Pirie Sparkling is the latest instalment of a project that began with the inaugural launch in 1995, it was received with immense international acclaim. Pirie are devoted to the artisanal élevage of fine Tasmanian Sparkling. Parcels of Chardonnay, Pinot Noir and Meunier are assembled around a reserve of aged vintages, the objective being to produce a consistent, full flavoured wine. Aromatically bready, toasty nots unravel over creamy autolysis characters from ageing on sedimentery yeast lees, all balanced by the crispness of apple and tangy citrus curd. True Method traditionelle in the fashion of the old world's most illustrious estates, followed by a minimum of eighteen months on lees before disgorging.

Established in 1909, one of the founding fathers at Compagnie Francaise des Grands Vins was agronomist engineer Eugene Charmat, eponymous inventor of the fermentation technique now employed to create the majority of sparkling wines around the world. Vinified from the noble cepage of Pinot Noir, Chardonnay and Pinot Meunier, Pierre Deville Vin Mousseux is treated to an extended period of ageing on sedimentery yeast lees, infusing the wine with complexity and enriching the palate with creaminess, all balanced by a refreshingly dry and crisp finish.

Pepperjack are an honest representation of the Barossa's rich viticultural heritage, enjoyed equally as much outside of Australia as they are at home. The illustrious Hurtle vineyard was established along Wenzel Rd southeast of Oakbank in 1990, in the very epicentre of the Adelaide Hills most auspicious terroirs. Its fortuitious aspects and propitious limestone slate schist loams yield the stellar quality of Pinot Chardonnay, that demands fashioning into a superior single vineyard sparkler. Tiraged in own bottle for a minimum two years, the extended term on lees achieves a toasty and fully complex, strawberry shortbread style of effervescence, its intense nougat cream palate resolving on a refined, elegant finish.

Ninth Island embarked on an odyssey to create the nation's finest sparkling by choosing the perfect ground to plant vines. In the creation of a Pipers River Sparkling, Ninth Island have intentionally aimed for an easy drinking style. Pinot Meunier plays an important role in the approachability, acting as a flavour accelerator that gives bright fruit notes on the nose and also acts to flesh out the middle palate. All is beautifully balanced by engaging Chardonnay characters of citrus, mineral and honeycomb, finishing with crisp and lingering acidity.

The highly opportune Pinot Noir vines at Bird In Hand are planted on the site of an ancient gold mine, a godsend of fortuitously fertile soils, magnificent growing conditions for stellar quality Adelaide Hill wines. Fermented in own bottle and aged five years on lees in true Méthode champenoise, the term of extended maturation imparts luxurious biscuit notes, chantilly crème and frais de bois. Her pastel cherry lipstick mousse, redolent with perfumes of strawberry nougat, butterscotch and brûlée. The consummate festive occasion wine.

Three choice sites, delivering a palette of subtle complexities, are closely managed to yield a special quality of fruit for Nautilus Cuvee. Dominated by the aromaticness and masculine red fruit complex of the larger component Pinot Noir, the style is one of elegance and finesse, at the same time exhibiting real fullness of flavour. A wine that marries the old world gracefulness of Methode traditionelle with the new world charm of Marlborough.

An assemblage of Mr Riggs wines up to ten years of age, enhanced by an older parcel of Grenache for lift and spice, finished off with a tot of fortified Shiraz from the prestigious Piebald Gully Vineyard, contributing subtle sweetness to a richly complex wine. Battle Axe is a tongue in cheek reference to dearest mother in law, she appears formidable with her powerful pink effervescence, ultimately soothing the palate with her generous nature and refined affability but beware the after punch of her dark fruityness and engaging depth of character.

Marlborough's only sparkling Sauvignon Blanc, Savee is a fully effervescent wine which expresses the exuberance of the region and the distinctive qualities of it's fruit. So much so that Savee has been referred to as supercharged Sauvignon Blanc by the industry press. The team at Mount Riley spend an enormous amount of time in the vineyard to determine those parcels of fruit which can best define the radiant Savee style.

Mount Langi make Victoria's most profound Shiraz, the confluence of parched and inhospitable terrains, exhilerated by the sobering Grampians winds, coax grapevines into concentrating flavours and intensifying the natural fruit sugars as berries slowly ripen. The wines of Mount Langi are renowned for their redolent bramble spice perfumes and generously weighted palates, as supported by such long lived, stately tannins. A luxurious effervescent Shiraz, extravagantly aged two years in own bottle and fashioned to a clean, ebullient contemporary styling.

Rutherglen is possibly the only productive enclave of world class Durif wines anywhere on earth. It also yields a quality of Shiraz that's unique in the world of wine, by virtue of the region's phyloxera and quarantine of vines. The Morris family have been making wine at Rutherglen since 1859. Within thirty years of establishment, their flourishing operations had made Morris the largest wine producer in the southern hemisphere. Introductions aside, Morris make an effervescent red wine of remarkable intensity, profound richness and sheer class.

A compilation of parcels Shiraz from McLaren Vale and Langhorne Creek, barrel fermented and matured in a high proportion of new American oak. Cherries and raspberry leap out of the glass, coconut and carob for palate weight, turkish delights, mocha and mint. The engaging and entertaining flavours of Miss Molly make her anything but shy, her fine effervescence releases the flavour of fresh berries, chocolate plummyness and liquorice allsorts enriching the palate.
